You’ll Need:

  • 1 tablespoon olive oil 
  • 1 little white onion, stripped and diced 
  • 3 medium carrots, diced 
  • 5 cloves garlic, minced 
  • 10 containers vegetable stock 
  • 2 (15-ounce) jars chickpeas, washed and depleted 
  • 1 container orzo* 
  • 4 eggs 
  • 1/2 container crisply pressed lemon juice, in addition to additional lemon cuts for serving 
  • 2 vast bunches new child spinach 
  • 1-3 tablespoons cleaved new dill* 
  • ocean salt and crisply broken dark pepper

How to Make:

  1. Warmth oil in a vast stockpot over medium-high warmth. Include onion and sauté for 3 minutes, mixing incidentally. Include carrots and garlic and sauté for 5 additional minutes, blending every so often. 
  2. Include stock and chickpeas, and mix to consolidate. Keep cooking until the soup achieves a stew. At that point lessen warmth to medium (or medium-low), whatever attempts to keep up a consistent low stew. 
  3. Add orzo and mix to join. Keep cooking until the orzo is still somewhat firm, mixing once in a while so the orzo doesn't adhere to the base of the dish.
