You’ll Need:

1 tablespoon olive oil
1 medium white onion, stripped and diced
1 expansive red ringer pepper, cored and diced
1 (4 ounce) can diced green chiles
2 (15 ounce) jars beans, flushed and depleted (I utilized one can pinto, one can dark beans)
1 (8 ounce) can entire part corn, depleted
3 glasses (about 1.5 pounds) destroyed or diced cooked chicken
3 glasses red enchilada sauce, natively constructed or locally acquired, separated
12 corn tortillas, divided
3 glasses destroyed Monterrey Jack or Mexican mix cheddar
garnishes: slashed new cilantro, diced red onion, daintily cut green onion or potentially diced avocado

How to Make:

  1. Warmth broiler to 375°F. Fog a 9×13-inch heating dish with cooking splash; put aside. 
  2. Warmth oil in a vast sauté dish over medium-high warmth. Include onion and chime pepper and sauté for 6-7 minutes, or until mollified. Blend in the diced green chiles, beans, corn, chicken and 2 containers enchilada sauce, and mix to join. Expel from warmth and put aside. 
  3. Pour around 1/2 measure of the rest of the enchilada sauce in the preparing dish, and spread until the base of the dish is equitably covered. Top with a layer of around 8 tortilla parts, so the whole dish is secured. Top equally with 1/3 of the chicken blend, trailed by 1/3 of the cheddar. Rehash with another layer of tortillas, chicken blend, and cheddar. Pursued by a last layer of tortillas, chicken blend, the rest of the 1/2 measure of enchilada sauce, and cheddar.
