6 garlic cloves skin on
2 sprigs new rosemary
1 container red wine
1 container meat/sheep stock
salt and pepper to taste
1 red onion finely cleaved
4 garlic cloves daintily cut
1 x 400g can cleaved tomatoes
2 teaspoons tomato glue
salt and pepper to taste
for the gnocchi
1 kg preparing/fleecy potatoes
2 containers cauliflower florets
2 egg yolks
1½-2 containers cake/universally handy flour
salt to taste
1 container semolina for tidying
How to Make:
- To make the sheep ragu, pre-heat the stove to 160°c.
- Spot the sheep bear, alongside the quartered onion, garlic cloves, rosemary, red wine and stock in a broiler confirmation dish at that point season to taste and cover with foil/a top.
- Spot in the stove and permit to cook gradually for 3-4 hours until the sheep is delicate and tumbling off the bone.
- Meanwhile, place the potatoes on a preparing sheet and heat for 45 minutes – 1 hour until a stick is effectively embedded.
- Spot the cauliflower on a preparing sheet and shower with a little olive oil. Permit to broil nearby the potatoes until brilliant dark colored and cooked through.
- Expel the potatoes and cauliflower from the broiler and permit to cool somewhat.
- Puree the cauliflower and put aside.
- Divide the potatoes and scoop the tissue into a bowl, utilizing a potato masher/fork, crush until there are no knots. Include the cauliflower puree.
- Include the egg yolks and blend well.
- Include the flour, 1/2 glass at any given moment and blend in delicately, you would prefer not to over-work the batter. I just required 1.5 measures of flour for my gnocchi yet a few blends may require more. It's ideal to ensure your potatoes are very dry before including the flour however as the more flour you include, the harder your gnocchi will be.
- When you've added enough flour to result in a delicate mixture, sever tennis ball estimated bits of the batter and fold into long strips on a floured surface. cut the strip into 1cm gnocchis and spot on a plate sprinkled with semolina (the semolina won't retain into the gnocchi) until you are prepared to cook them. On the off chance that you like, you can likewise utilize a fork to make indents in the gnocchi which make little spaces to suck up a greater amount of the ragu sauce.
- At the point when the sheep is cooked, expel from the broiler and shred.
- In a pan, saute the red onion and cut garlic until delicate and translucent at that point include the tomatoes, tomato glue, destroyed sheep and all the sheep's cooking juices.
- Decrease the warmth and permit to stew for 30-45 minutes until the sauce has diminished somewhat and the sheep is exceptionally delicate.
- To cook the gnocchi, bring an extensive pot of salted water to the bubble and drop the gnocchi in cautiously. When they buoy to the surface they are prepared. Evacuate them with an opened spoon and spot straight into the ragu.
- Serve right away.
